Notes from the curator
This is an excellent Black Honey process coffee from Costa Rica. It comes from a small 14 hectare farm that practices selective picking of only the ripest cherries. It was 'honeyed' or left to dry with cherry mucilage intact for 12 days in order to impart sugars from the cherry into the bean. It is a nice light-medium roast so as not to lose those nuances imparted by the honeying process.
