Notes from the curator
At the far end of the Guji Zone in Ethiopia lies Uraga, a coffee growing region that can reach a height of 2300 meters. When we cupped this coffee at a sample roast, we enjoyed the stone fruit, floral, and black tea notes. However, we wanted a more developed coffee for the Holiday Origin. Less acidity and more sugar caramelization was the goal. We roasted the coffee longer with a sharper roasting curve that expressed darker red fruits & more sugar development.
