Elkin Guzman is by far one of the most innovative coffee producers in the world. This lot is a natural process unlike any other. When Elkin realized that the hybrid Castillo varietal takes a little longer to mature, he decided to test just how long he could keep it on the tree. He noticed that with an extended time spent before harvesting, that the sugar content increased, and the fruit held in tact. The result is a very clean natural with a tropical acidity and milky body.
